Food Contamination? - Not with this Butcher's Block! Virtually all other Butchers Blocks on the market have either a vegetable oiled surface or a raw timber surface. Both of these types of surfaces will contaminate the food. This block has a waxed finish (soaked into the surface) so that even after repeated cutting, food juices and oils will bead on the cutting surface and can be wiped away with your dish cloth. The cutting surface of this block can even be sprayed with your 'Surface Spray' then rinsed to be sure that it is free from germs. Oiled or raw Butchers Blocks would simply absorb the smell of the disinfectant as they do with food smells and juices. Too Lovely to Cut On! This Butchers Block is designed to be cut on. It has a 6 inch (15 cm!) thick timber cutting surface, which is also 'End on Grain'. If you have even had a plain pine cutting board, you will notice that even after years of cutting on it that they don't wear away significantly for what they are, and you don't notice a cut mark each time you use it. You can imagine how little damage you would do to this Butchers Block if you hardly scratch the cheap pine cutting board. Obviously a meat cleaver is going to make marks on the surface of the block, but a meat cleaver is an axe! You can meat cleave on this block but we prefer not to, so that the surface remains flat for pastries and appearances. If you do intend to do some meat cleaving the perhaps restrict this to one of the corners of the block, leaving the remainder free from blemishes. Most of the cuts you will put into the surface of the block will be in the wax surface and will mostly clear away when you re-apply the wax (provided) to the cutting surface. Maintainance. Treat the cutting surface as you would with your normal bench tops. Periodically clean with a "Surface Spray" or damp cloth. A monthly wipe and polish with the wax provided will remove most scratch marks, and keep the surface shiny and waterproof. The remainder of the body is lacquered, and so wipe periodically with a damp cloth or your preferred Furniture Polish. What is it Made of? The cutting block and legs are made of 'Monterey'. A native of America, it is grown in New Zealand, and imported by us for use in these blocks. The beauty of Monterey is its stability and durability. The legs form the corners of the cutting surface. That is the corner blocks of the cutting surface, are the tops of the legs. Forming the legs into the cutting surface gives the block far more rigidity. How Do We Get it Home?
